Victoria Stitch's Baking Day

Victoria Stitch loves to bake.
She likes squeezy icing and sprinkles and silver balls. 
She loves chocolate chips and smarties and currants and vanilla essence.
She adores stirring and spooning and whizzing with the whizzer.

Yesterday Victoria Stitch made fairy cakes so light that they almost grew wings and floated into the sky.

Here's how she did it:

 You will need:
  • 100g butter or margarine
  • 100g caster sugar
  • 100g self-raising flour, sifted
  • 2 eggs
  • 1/2 teaspoon vanilla essence (optional)
 1- Preheat the oven to 180 degrees / Gas mark 4
 2- Mix the butter and sugar together until light and fluffy.
 3- Add the eggs one by one.
4- Fold in the flour and a drop of vanilla essence. You can use an electric whizzer to do this but be careful!
5- Spoon the mixture into paper cupcake cases and put them in a baking tray.
 6- Bake in the oven for 10-15 minutes.

When the cakes are ready take them out of the oven and leave them to cool.  Now comes Victoria Stitch's favourite part of all!

Decorating!
 Mix icing sugar and butter together and add some food colouring.  Now you have icing!

You can decorate the icing with anything you like!
Victoria Stitch's favourites are flamingo and frog king cupcakes.

She likes to arrange them nicely...
